At Revel, our story begins with our head brewer, Adam Gallegos. Once a craft beer brewer, Adam’s journey took a turn when he and his wife, Sonia, heard about the health benefits of kombucha. Intrigued, they decided to brew a batch at home—but the sugary fermentation left them uninspired.

Then, through a friend, they discovered jun — a delicate ferment of raw honey and green tea, often called the "champagne of kombuchas." The hunt for a jun culture became a mission, and the reward was worth it. Its smooth, refined taste let fruit flavors and spices shine, delighting even their young son.

As they savored jun, Adam and Sonia noticed something else: their health and energy improved. They knew this was a drink worth sharing. Adam dove into perfecting the brew, while Sonia designed a vibrant, family-friendly tasting room near their home in Ojai, California. Word spread fast, and soon, lines stretched out the door.​​​​​​​​​​​

Today, Revel flows on tap and in cans at a growing list of select locations. We’re driven by a simple belief: when you create good things that make the world better, good things follow. We’re here to craft the best beverage possible. By investing in your well-being, we nurture our own.
